Fyffes Banana Waffles

Serves 4

  • 150g self-raising flour
  • 1 tbsp caster sugar
  • ¼ tsp salt
  • 250ml milk
  • 1 egg
  • 60g butter, melted
  • ½ tsp vanilla extract
  • 1-2 bananas, finely chopped

  1. Whisk dry ingredients together in a medium sized bowl. Whisk together milk, egg, melted butter and vanilla in a jug, then add to the dry ingredients. Whisk together until smooth. Stir in the chopped banana.
  2. Heat your waffle maker according to manufacturer’s instructions. Once hot, pour 125ml of the waffle batter into the waffle maker. Cook according to manufacturer’s instructions. Keep waffle warm in oven set to low and cook remaining waffle batter.
  3. Serve warm waffles with freshly sliced banana, honey or maple syrup, cinnamon or any other toppings you like. Dark chocolate chips are delicious too!
