Right, if we were to have one ingredient on a desert island it would probably be eggs. We love the things, and eat maybe too many every week, what between baking, frittatta making and of course, brunching it up at the weekend. And we’re not alone. Bord Bia is reporting that we are eating way more eggs than we used to, with 37% of 25-45 year olds choosing eggs as the mainstay of their evening meal. To celebrate this, Bord Bia has come up with a load of gorgeous egg-related recipes, and have given us a few to add to our arsenal.
