30 chicken wings, cut into the tip and the drumstick
5 tbsp plain flour
For the sauce:
1.5 tbsp white vinegar
4 tbsp butter, melted
1 tsp Worcestershire sauce
1 tsp Tabasco sauce
6 tbsp hot sauce
1 tbsp paprika
1/2 tsp salt
1/2 tsp cayenne pepper
1/2 tsp garlic granules
1/4 tsp black pepper
For Blue Cheese Dip:
120ml sour cream
50g crumbled blue cheese
120ml mayonnaise
1 tbsp white wine vinegar or white vinegar
1 clove garlic, crushed
To serve: celery sticks
Instructions
Coat the chicken wings in flour and cook in a deep fryer in batches, until crispy and cooked through. The wings will take about 8 minutes a batch.
To make the wing sauce, heat the vinegar, butter, Worchestershire sauce, Tabasco sauce and all of the dry ingredients. Simmer over a medium heat for five minutes, until all of the ingredients have come together.
To make the blue cheese sauce, mix together all of the ingredients in a small bowl with a fork, adding a dash of water if it needs to be loosened.
Smother the crispy wings with sauce and serve with a bowl of blue cheese dip and lots of celery stick on the side.
