Chilli Con Carne

A  blend of earthy spices and mild chilli makes this dish an ideal midweek pick-me-up. It tastes even better the next day!

Ingredients

  • 2 tbsp olive oil
  • 1 onion, finely diced
  • 2 garlic cloves, crushed
  • 1 red chilli, de-seeded and finely chopped
  • 500g lean minced beef
  • 1 tin chopped tomatoes
  • 3 tbsp tomato puree
  • 1 tbsp tomato ketchup
  • 250ml beef stock
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1 tbsp worcestershire sauce
  • 1 tin kidney beans
  • 1 lime
  • To serve:
  • 2 tbsp coriander leaves, chopped
  • basmati rice

Instructions

  1. Heat the olive oil in a large an and fry onion for 1 minute and then add garlic and chilli for another minute. Then add the beef and brown for approx 4- 5 minutes.
  2. Add the chopped tomatoes, tomato puree, tomato ketchup, beef stock, ground coriander, cumin, cayenne pepper and worcestershire sauce. Cover with a lid and simmer for 55 minutes. Stir throughout cooking.
  3. Once reduced add the kidney beans juice of ½ lime.
  4. Serve with basmati rice, garnished with coriander leaves and a wedge of lime.
