Indian Spiced Cauliflower

This vegetable dish is a meal in itself, served with rice and a yoghurt dip, but works really well as an accompaniment to any Indian curry or lentil dish.

Ingredients

  • 3 tbsp vegetable oil
  • 1 tsp cumin
  • 1 tbsp turmeric
  • 1 tsp black onion seeds
  • 1 head cauliflower, cut into florets
  • Salt
  • To serve:
  • Steamed rice
  • Natural yoghurt

Instructions

  1. Preheat the oven to 220C/425F/gas mark 7.
  2. In a large bowl, combine the vegetable oil, cumin and turmeric and mustard seeds and toss the cauliflower through, ensuring it is well coated. Season well with salt.
  3. Place on a baking sheet and roast for 20-25 minutes, until just tender. Serve with rice and yoghurt.
