  • For the meringue:
  • 5 egg whites, room temperature
  • 275g caster sugar
  • 2½ tsp cornflour, plus extra for dusting
  • 1½ tsp white vinegar
  • 1 tsp vanilla extract or paste
  • For the topping:
  • 500ml double cream
  • 400g strawberries, rinsed, trimmed and halved
  • Icing sugar to dust
