  • For the base:
  • 200g double chocolate Digestive biscuits, crushed
  • 75g butter, melted
  • For the cheesecake:
  • 4x (125g) punnets fresh raspberries, divided (some will be puréed and some left whole)
  • 1 tbsp caster sugar
  • 1 tsp cornflour
  • 600g full fat cream cheese
  • 250ml double cream
  • 100g icing sugar
  • 1 tsp vanilla extract
